Haven’t played in a while but I put a decent amount of time into No Man’s Sky with a friend of mine about a year ago—it’s got a lot going for it playing solo, but it’s fucking *awesome* if you’ve got a co-op partner
I no longer have a CO-OP partner but I have had the pleasure in the past, absolutely amazing to just sit aboard a freighter and traverse the galaxy together and call all your fleets in when you all find a planet you like and want to spend a few hours on
No Man's Sky is still on my 'games I really ought to get into one day' list. I played it for a little bit but didn't have time to commit to it fully back then. It does have that 'game you could only dream of as a child' sort of vibe to it, which is probably why the initial hype grew outside of the devs' initial capabilities.
There's just something about space exploration that makes the imagination go wild. In addition to the projects you've mentioned, I also remember Spore as one of those games where the mere premise was enough to create an unconquerable mountain of expectations, even though I ended up quite liking that game myself.
To be fair, it does have a very slow and tedious start but once the game lets you off the hook a bit and stops talking, you can get lost in it for weeks, months and even years if you so choose.
Spore! Another one I've heard was made better over time as well; I've not played that one yet and probably should find a way to do so, though I've heard it's a bit of a pain today.

This is a game that has sat in my wish list for a long time. It always looked interesting but I always feared it would become one of those games of doing the same thing over and over again. But I appreciate your take on it. It is nice to see that a game after 10 years is still delivering new content and something to enjoy. I really do need to just give it a try as a fan of space games.
Credit where credit is due to Elite: Dangerous (because it targets players who seek a more "sim-like" gameplay, but you are right. Even though I am now mostly in Star Citizen's boat, I have No Man's Sky sitting in my Steam library, already installed, waiting for the right moment.
I was one of the unfortunate fools who picked up NMS on release date for the PS4, and even in that state I enjoyed it. The updates arrived when I had already given up on it, but every now and then I came back to see where it was and it's always given me this vibe that, if I could really dedicate the time to get into it, it would trap me forever.
I just have a hard time getting through a few of its decisions if you choose to start from the beginning. You can build bases which require maintenance, but you are also expected to keep going deeper into the galactic center. You can warp back to older bases, but why? It seems like having a freighter is a more efficient way to have a base, but that's a more advanced thing. The game has so much content now that starting from the beginning can be a bit overwhelming.
Still, I agree that this is probably the best space game in terms of content and possibilities. I hope one day I will have the courage to tackle it.
